What chicken parmigiana is
A chicken breast, flattened, breaded and fried until the crumb is crisp, then covered in tomato-based sauce and cheese and finished under heat until the cheese blisters. Italian-American by origin, Australian pub staple by adoption. Everywhere it’s served, it’s the comfort dish people order when they don’t want to think.
How we make ours
The chicken is breaded to order and fried so the crumb stays crisp under the sauce. The sauce is our bolognese — the same slow-cooked beef ragù that goes on the Bolognese Pasta and the Lasagna — rather than a plain tomato sauce, so it’s richer than most parmas you’ll find. Mozzarella goes on top and the whole thing goes under the grill until the cheese is blistered and pulling. Fries on the side, a basil leaf on top.
